NORMAL CHEF: Homemade pot stickers

It's summer time everyone is busy but we still have to put a meal on the table. During the summer I do a cross between a lot of homemade meals, sandwiches, and a combination of semi made meals. My husband's a big lover of Chinese food but I hate to pay the price for it and it contains way too much sodium, so I tend to make my own.
  • 1 package of potstickers
  • 2 cups of leftover cooked rice
  • 1/2 onion, chopped
  • 2 each celery ribs, diced
  • 2 carrots, peeled and diced
  • 1/2 can of spam, sliced and diced
  • 1 cup green peas
  • 3T oil, vegetable or canola
  • 2T soy sauce, low soduim
  • 2 cloves garlic minced
  • 2T fresh ginger, peeled and diced
  • 2 eggs, scrambled in a separate bowl
  • Salt and pepper to taste.

Is easier when you have all your vegetables cut and ready to go. In a sautee pan put your oil in the pan let it get warm, when oil starts to shimmer add a couple pieces of onion if it starts to sizzle it's ready add all the onion and sautee a couple of minutes, then add your fresh ginger, and fresh garlic and sautee adding the rest of your vegetables sautee then add spam sautee everything together and then add your leftover cooked rice sautee until everything hot add your soy sauce and rest of seasonings. Cook making sure it's all cooked together. If people want more sauce or salt they can add it at the table.

Pot stickers, I prefer mine fried but you can either fry them or steam them its up to you. It makes for a quick meal.

Of course it makes for a really nice meal.

Now if you want to make substitutes you can do so. For example you can add more vegetables substitute spam with ham or turkey or even grilled chicken.
