NORMAL CHEF: French Onion Chicken



My favorite time of the year in once again upon on us, and yes I mean fall, a season full of glorious vibrant colors, crispness in the air, and one of my personal favorites, sweat pants. The cooler weather is my favorite time to cook/bake because I am such a comfort food person, I love macaroni and cheese, chili, chicken and dumplings, and of course beef stew, all things that require a little bit of cooking time and just make your house smell wonderful. Now with that being said we are still going to get some warm weather, so I do not want to take you to those kind of recipes just yet, instead I am going to give you one I seen on facebook with some of my own modifications. It came out delicious.
   

French Onion Chicken:


  • 4 chicken cutlets
  • 3# onions, julienne
  • 3 c Beef broth
  • 1T kosher salt
  • 1t ground black pepper
  • 1T poultry seasoning
  • 3T olive oil
  • 2T Butter
  • 4 slices provolone cheese
  • 1/2# mushrooms, cut in quarters


Pat your chicken cutlets dry, ( they will sear better), season the top side of the chicken. Melt your butter and add your olive oil to a big sautee pan and sautee your sliced onion, until a beautiful golden brown, this will take about 10 to 15 minutes because your going to do this over a medium heat and it will caramelize your onions, when they reach the golden brown stage remove your onions from the pan and set aside, place your chicken breast in the pan, seasoned side down and seasoned the other side.

Sear your chicken for about 5 minutes on that side until its golden brown and turn it over to sear other side, once both sides are nice and golden brown add your beef stock back to the pan making sure you move the stock around to pick up all the pieces of the fond ( sticky bits in the pan) then add back in your onions and the mushrooms (if you dont like mushrooms just dont use them, and then next top each piece of chicken with a slice of provolone cheese, now at this point you can just cover it and leave it on the stove top to melt the cheese, or you can place it in a 350 oven for 5 minutes to melt the cheese. Serve one piece of chicken per person and enjoy.

When I did this meal, I just served it with some fresh bread and a tossed salad, it was fantastic. I hope that you enjoy it as much as we did.
